Rainbow Weeds of the Sea

Oh SEAWEED. I love you so.
Purple, red, black, green, and brown.
Iron and salt,
You can turn any frown upside down.

Dining with my soul brother and sister at Souen is always a treat. Souen is an original macrobiotic institution in NYC, an establishment with a huge menu of wholesome and colorful delights.

Shared plates included dark black hijiki, evergreen kombu, chewy red dulse, emerald wakame, toasted nori, and more.


Seaweeds are an abundant source of nutrients, chock full of essential amino acids, vitamin A, C, potassium, iron, calcium, iodine, and magnesium, particularly beneficial for those who eat vegan.

Eat them in soup, eat them raw. Yum!

Even Oprah endorses seaweed…and mama ALWAYS knows best.
